Peach granola yoghurt with a coconut topping

Serves 2:

Ingredients

80 grams (3oz) of granola –  use your favourite commercial brand or prepare a batch as follows

250 grams (8oz) of low fat Greek yoghurt

1 sliced  ripe peach or nectarine

* if at the end of the summer, considering poaching the peach to improve the flavour. Add a little sugar and a teaspoonful of honey to 200mls of boiling water. Cut the peach in half, remove the stone and simmer for 2-3 minutes on each side in the syrup until tender.

2- 4 teaspoonfuls of runny Greek honey to taste

A tablespoonful of desiccated coconut

Method:

Place a thin layer of yoghurt at the base of each glass bowl.

Add a generous serving of granola.

Continue to add a further layer of yoghurt and top with either fresh sliced or poached peach slices and a generous sprinkling of coconut.
