Oat and fruit granola with reduced added sugar
Serves 15 – 18
Ingredients:
125mls agave or maple syrup
2 tbsp honey
2 tbsp canola or rapeseed oil
1 tsp vanilla essence
300 grams rolled oats
100 grams flaked almonds
50 grams berries and seeds (I used Waitrose seed, berry and goji mix)
100 grams of cherry and cranberries
50 grams dried apricots – chopped
2 tablespoonfuls of almond crunchy butter
4 tbsp sesame seeds
50 grams desiccated coconut
Method:
Heat the oven to 150 degrees/130 degrees fan/Gas mark 2.
Mix the oil, agave syrup, honey and vanilla in a large bowl. Add all the rest of the dry ingredients and mix really well.
Tip the granola onto 2 baking sheets and spread evenly. Bake for 15 minutes, take out of the oven, give it a further good stir again back in the large bowl and then pour it back onto the baking paper and cook for a further 10 -15 minutes.
Leave to cool and finally break up into smaller pieces and store in an airtight tin or kilner jar.
Enjoy as breakfast cereal, add as a topping to yoghurt or have a few delicious pieces before or after a gym session.
